Spanish celebrity chef Dabiz Muñoz was recently invited by Japanese chef Hiro Sato to try “shirako,” a Japanese delicacy made from roasted fish semen.
After trying the dish, the 43-year-old chef wrote: “Grilled pufferfish semen. Indescribable, it blew my mind enormously.”
Although Muñoz posted specifically about his experience tasting pufferfish semen, the Japanese delicacy can also be made from the sperm of other sea animals, such as octopuses, monkfish, cod, salmon and squid. 
To prepare shirako, the male fish sperm sacs are carefully separated, and the sperm is then extracted. The resulting product can vary in color from pink to white tones.  
Muñoz, who was named the world’s best chef for the second consecutive year by the Best Chef Awards in 2022, reportedly plans to feature shirako on the menu at his three Michelin-starred restaurant DiverXO.
At DiverXO, guests are required to purchase a ticket that costs over $400 rather than making a traditional reservation in order to dine there.
The DiverXO website describes the restaurant as the “dream world of Dabiz Muñoz,” where guests can expect to embark on a “journey” of “hedonistic, greedy and creative cuisine” crafted by the renowned chef himself.
